I got purple this year from Bud. Only one box. I'll have to make them last all week.
We're having a potluck at work today, and it looks like a sugar overload is in the making. I am experimenting on my fellow co-workers, and making a vegetarian mexican casserole for us to eat for lunch and to keep us all from going into sugar shock. It's going to be layers of corn tortillas, cheese, and a mixture of diced tomatoes, green chilies, and black beans. And spices! I don't think I have any corn to add to the mix, but if I do, it will be tossed in, too. Then bake til it looks good, and serve with sour cream. Too bad avocadoes are over $2.00 for one, otherwise I would make some guacamole to go with it. I think we're also having fruit pizza, quiche, candy, brownies, and chips and salsa. It will probably be the farthest thing from a traditional Easter dinner that I have ever had. But really, as long as it keeps the sugar hyperness to a minimum, who cares?
The sun is shining--of course. On the day I can't go outside and run! And rain is coming Monday and Tuesday. Since May is just around the corner, I can only guess Mother Nature is going to throw open the doors to Spring and bring in an extended period of sunshine and warmer temperatures.
What are you eating for Easter, besides copious amounts of candy?
'Cause let's face it--even if we're all adults, we still want our Easter candy.
Which one should I eat first? |

Sounds delish! Hoppy Easter :D
ReplyDeleteI've never had a peep. I know almost 40 and no peep.
ReplyDeleteI am doing laundry and since it's so nice, I am going to hang them out and maybe get my walking in.
Enjoy your peeps!
Sorry you have to work today, but your casserole really sounds yummy! I'm sure your co-workers will love it!
ReplyDeleteIt's sunny, Hubby's playing golf, and we're going out for dinner at one of our favorite restaurants tonight. I'm stoked! Most of my family is traveling over the Holiday this year, so I'm not doing my usual brunch. I'm totally OK with that. After this past winter, I could use the break!
Hubs loves his Peeps & he does the same thing that you do. I'm more of a chocolate person, myself. Hope it turns out to be a really nice day at work. Enjoy your purple peeps! (after they've had their "air time", that is! LOL)
XOXO

I think you should the yellow one first, he knows he doesn't belong, just end his misery. I am making chicken today, don't know exactly how, but will figure that out later. Our dessert will be a 'colomba' which is the traditional Italian cake we eat for Easter. I might post a pic on the blog if I get unlazy later.
ReplyDeleteNice here, but windy, still deciding if I should go running outside or on the treadmill.
Happy Easter to you and Bud!
Thanks for all your comments. I made it through the day in the company of good friends at work. We pretty much ate all day, and they liked my stuff! Then I went to Bud's house and ate a delicious dinner his sister put together. And I found more candy at home after Bud told me I didn't find it all earlier today. Now I really must kick in the running so I can afford to eat all this candy.
ReplyDeleteHope everyone had a wonderful Easter and have a great week.
Hugs
Sue
