A Super Quick And Easy Banana Bread

I found a recipe for banana bread on Simply Recipes which is a great website for all sorts of baking and cooking recipes.  I've made this banana bread twice, and it is so pathetically simple to make--only one bowl is needed!  I've added chocolate chips to my bread, which makes it just over the top, yummy good.  If it's a homemade pumpkin, banana, or zucchini bread, I will add chocolate chips anytime.  I usually cut down on the sugar required; if it's one cup, I put in 3/4 of a cup.  The sweetness of the fruit and the chips makes up for it, and quite frankly, you can't tell the difference!  So whip up a loaf or two of banana bread.  It takes less than 15 minutes from start to placing it in the oven.

I didn't have time to take a photo of my delicious loaf cooling on the counter, but it looks amazingly similar to this:

I used defrosted bananas that I kept in my freezer from my failed attempts to eat healthier this summer.  I can never eat the bananas fast enough before they start to ripen too much,  so I  just peel them, stick them in a freezer bag, and  defrost them before using for the bread.  Also, they get pretty liquidy after defrosting, so I just pour the nanner liquid out of the bag before I use the bananas.

  3. Yummm! I am such a slug... I usually bake in the colder months because 1) it's cheaper than buying baked goods from the store and 2) I love the way it makes the house smell on chilly Fall/Winter afternoons.

    I have 2 pecks of apples, and so far the only thing I've managed to make is Hubby's great-grandmother's apple cake. No pie, no apple crisp, no apple butter. I can't even claim a single loaf of zucchini bread, no banana, no pumpkin and no sour cream chocolate chip.....

    I don't know what my problem is this year, but I'm not liking this "me". I'm hearing this same thing from a lot of bloggers and people in my "off-line life" too. Maybe some evil mad scientist has spiked the world's water supply with an apathy potion?! In my neck of the woods, I'm thinking he might have also thrown in a pinch of ambivalence powder....

    Congrats on the banana bread! I'm glad at least one of us has made the effort. :~) Need any apples?

  4. I would love to make an apple spice cake. Next week I'm making homemade apple sauce for Thanksgiving, and going to try and can the rest for Christmas presents. Never canned before, so we'll see. I'm feeling pretty unproductive myself--can't do too many things at once, have to drop something if I try to do anything new. And exercise is at the bottom. I'm not happy with myself about that.
